Main Poha Base • Thick Poha (Flattened Rice) – 6 cups • Turmeric Powder – 1 tsp • Sugar – 2 tsp • Salt – ½ tsp 🌶️ Jeeravan Masala (Homemade Spice Mix) • Coriander Seeds – 1 tbsp • Fennel Seeds – 2 tsp • Cumin Seeds – 1 tbsp • Cloves – 10–12 • Black Peppercorns – 1 tsp • Cinnamon Stick – ½ inch • Bay Leaves – 2 • Nutmeg – ½ piece • Turmeric Powder – 1 tsp • Red Chilli Powder – 1½ tsp (divided) • Salt – ½ tsp • Black Salt – ½ tsp • Sugar – 2 tsp • Dry Mango Powder (Amchur) – 2 tsp • Asafoetida (Hing) – ¼ tsp 🥜 Tempering & Flavor • Oil – 2 tbsp • Peanuts – 3 tbsp • Cumin Seeds – 1 tsp • Fennel Seeds – 2 tsp • Curry Leaves – 8–10 • Green Chillies – 2–3 (chopped) • Onion – 1 big (chopped) • Asafoetida – a pinch • Turmeric Powder – ½ tsp • Salt – ½ tsp • Mustard Seeds – ½ tsp 🌿 Garnish & Toppings • Fresh Coriander Leaves – handful • Sev – ½ cup • Pomegranate Seeds – ½ cup • Extra Jeeravan Masala – 1–2 tsp • Warm Milk – 2–3 tbsp (optional) Step-by-Step Recipe 1. Preparing Poha • English: Take 6 cups thick poha, wash gently with water, drain in a sieve, and rest for 10–12 minutes. Add 1 tsp turmeric, 2 tsp sugar, ½ tsp salt. Mix lightly. • Odia: 6 କପ୍ ମୋଟା ପୋହା ନିଅନ୍ତୁ, ପାଣିରେ ହାଲୁକାରେ ଧୋଇ, ଛାଣି ରଖନ୍ତୁ, 10–12 ମିନିଟ୍ ଚୁଡା କୁ ରଖିଦିଅନ୍ତୁ। 1 ଟିସ୍ପୁନ୍ ହଳଦୀ, 2 ଟିସ୍ପୁନ୍ ଚିନି, ½ ଟିସ୍ପୁନ୍ ଲୁଣ ଯୋଗ କରନ୍ତୁ। ହାଲୁକାରେ ମିଶାନ୍ତୁ। 2. Jeeravan Masala • English: Dry roast coriander seeds, fennel, cumin, cloves, pepper, cinnamon, bay leaves, nutmeg. Cool & grind with turmeric, chilli powder, salt, black salt, sugar, dry mango powder, asafoetida. Add 1 tsp red chilli powder. • Odia: ଧନିଆ, ଜିରା, ପାନମଧୁରୀ, ଲବଙ୍ଗ, ଗୋଲମରିଚ, ଦାଲଚିନି, ତେଜପତ୍ର, ଜାଇତ୍ରି– ଭଜନ୍ତୁ। ଥଣ୍ଡା କରି, ହଳଦୀ, ଲଙ୍କା, ଲୁଣ, କଳା ଲୁଣ, ଚିନି, ଅମ୍ଚୁର, ହିଙ୍ଗ ସହିତ ମିଶାନ୍ତୁ। 1 ଟିସ୍ପୁନ୍ ଲାଲ ଲଙ୍କା ଯୋଗ କରନ୍ତୁ। 3. Tempering • English: Heat 2 tbsp oil, fry 3 tbsp peanuts. Add cumin, fennel, curry leaves, green chillies, onion, asafoetida, turmeric, salt, mustard seeds. Fry till onion golden brown. Add 2 tsp Jeeravan masala. • Odia: 2 ଚମଚ ତେଲ ଗରମ କରି, 3 ଚମଚ ଚିନାବାଦାମ ଭଜନ୍ତୁ। ଜିରା, ପାନମଧୁରୀ, କରିପତ୍ର, ଲଙ୍କା, ପିଆଜ, ହିଙ୍ଗ, ହଳଦୀ, ଲୁଣ, ସୋରିଷ ଯୋଗ କରନ୍ତୁ। ପିଆଜ ସୁନାଳି ହେଲେ 2 ଟିସ୍ପୁନ୍ ଜୀରାବନ୍ ମସଲା ଯୋଗ କରନ୍ତୁ। 4. Mixing Poha • English: Add tempered onion-peanut mix to soaked poha. Mix gently. Sprinkle Jeeravan masala, warm milk, and cook for 4–5 minutes. • Odia: ଭଜା ପିଆଜ-ଚିନାବାଦାମ ମିଶ୍ରଣକୁ ଚୁଡା/ ପୋହାରେ ଯୋଗ କରନ୍ତୁ। ହାଲୁକାରେ ମିଶାନ୍ତୁ। ଜୀରାବନ୍ ମସଲା, ଗରମ ଦୁଧ ଛିଟା ମାରିକି 4–5 ମିନିଟ୍ ରାନ୍ଧନ୍ତୁ। 5.
