Cheddar has been the dominant cheese made in New Zealand for most of its history as a cheese producer. For a long time, I have wondered why it is that New Zealand cheese isn’t more diverse considering dairy products are one of our largest exports today. This video is my attempt to make sense of the dominance of cheddar in New Zealand’s cheese history. In doing so, I also look at the rise of cheese factories and the role exports had in New Zealand’s cheese production.
