Add next 5 ingredients; beat vigorously 2 to 3 minutes. Turn out on surface well-dusted with biscuit mix. Knead till smooth, about 25 strokes. Roll out to ½ inch. Cut with floured 2½-inch biscuit cutter; shape in buns. Place in greased 11x7x1½-inch baking pan. Cover with damp cloth. Let rise in warm place till almost double, 1 to 1¼ hours. If desired, cut shallow cross in each bun with scissors. Brush tops with slightly beaten egg white. Bake in hot oven (400°) 12 to 15 minutes or till done. Remove to cooling rack. Add vanilla and confectioners’ sugar (about 1 cup) to the remaining egg white. Use this as frosting for piping crosses on warm buns. Makes about 1 dozen. ⸻ Eggs in Toast Cups Trim crusts from slices of day-old bread. Brush both sides with melted butter or margarine. Fit each into a custard cup or large muffin-pan cup. Toast in slow oven (325°) 15 minutes. Remove from oven. Break an egg into each toast cup. Season with salt and pepper and dot with butter. Cover with foil. Return to oven and bake 12 to 15 minutes or till done. With spatula, loosen toast from sides of cups or muffin pans. Serve hot. Note: Or poach eggs; serve in toast cups. ⸻ Pink Cereal Prepare farina or creamy rice cereal according to package directions. Add few drops red food coloring to tint the white cereal pink. Serve hot, topped with strawberry jam, preserves, or currant jelly. ⸻ Serving Notes (from last image) Start with a salad of orange sections and strawberries (pass powdered sugar for “dressing”). You may bake the Eggs in Toast Cups, or poach eggs and slide them into their holders as we did. Bacon can cook in the oven or a skillet—your choice. Bunnies hide hot Pink Cereal.
