Recipe for Galette : Ingredients for the dough: 1 1/2 cup all-purpose flour. (plus more as needed) 8 Tablespoons ( T ) of very cold butter. 1 teaspoon ( t ) of sea salt. 1/4 to 1/2 cup very cold water. Mix 2 Tablespoons of flour with 2 Tablespoons of sugar and set aside to sprinkle on rolled out dough before arranging apple slices. Ingredients for the filling: 2 large green apples ( Granny Apples) remove the apples center core. using a knife slowly peel the apple's skin off. ( place apple peels in small bowel with fresh squeezed lemon juice: yummy. ) Place apple slices in a bowel and add the lemon juice. Slice the apple in thin pieces. Lemon A squeeze of lemon juice on sliced apples keeps them from turning brown and adds tanginess. Preheat Oven to 375 degrees fahrenheit. Instructions: Mix the flour, butter ( use a cheese shredder to shred the COLD butter) and salt in a mixing bowel. Slowly add the cold water while mixing the above ingredients until combined. If needed put dough in the fridge to keep the dough firm. Roll the dough out on parchment paper, use flour as needed to keep dough from sticking to paper. Leave a 2 inch or more border as you sprinkle the flour & sugar mixture above onto the dough. Arrange the sliced apples in a circular pattern. Top the apple with any desired berry pieces. Raspberries are good. Fold the outer 2 inch edges of dough over the apples (towards the center of the galette). Wet the edges of the folded dough slightly with cold water and lightly sprinkle with sugar. Bake for 35 to 42 minutes until the the edges are lightly browned. ( Experiment as altitude can make a difference in cooking duration). It's good served hot or cold.
