Chef A-Ching Facebook: / achingchef Chef A-Ching Instagram: / achingchef 📍 Cooking Measurement Guide 📍 1 tablespoon = 15ml = 15cc 1 teaspoon = 5ml = 5cc 1 rice bowl = 200cc 1 rice cup = 150cc 🥣 Ingredients ✍ ✅ Century eggs - 4 ✅ Rice - 2 cups ✅ Lean pork strips (from hind leg) - 220g ✅ Ginger strips - 15g ✅ Green onion, chopped - as needed ✅ Cilantro - as needed ✅ Rice wine - 1 tbsp (for marinating meat) + 1 tbsp (for seasoning) ✅ Salt - 1/2 tsp (for marinating meat) + 2 tsp (for seasoning) ✅ Cornstarch - 2 tsp ✅ White pepper - 1/3 tsp (for marinating meat) + 1/2 tsp (for seasoning) ✅ Sesame oil - 1 tbsp ✅ Rock sugar - 1 tsp ✅ Water - 2300ml 🍳 Chef A-Ching's Cooking Notes 📝 1. Marinate the meat with rice wine, salt, cornstarch, white pepper, and sesame oil 2. Oil your knife and cut century eggs into small cubes 3. Mash one century egg into the rice, add rice wine and mix well 4. Add rice to hot water, bring to a boil, then simmer on low heat for 15 minutes 5. Add century egg cubes and meat strips, continue simmering and stir occasionally 6. Season with salt, rock sugar, and white pepper 7.
