[Muffin batter] 100 g eggs 110 g sugar 90 g greek yogurt or drained plain yogurt 130 g cake flour 3 g baking powder 50g Melted butter 80 g blueberries (fresh or frozen) 1) Mix the egg and sugar well. 2) Add yogurt and mix. 3) Sift the flour and baking powder and mix. 4) Add melted butter and mix. 5) Add blueberries and mix. 6) In a muffin pan lined with a paper cup, pour the batter 80% each, and place a lot of crumbs on top. 7) Bake in a preheated oven at 170 degrees Celcius for 30 minutes. (With Wiswell Enhance Oven / 25 minutes by heating upper and lower + 5 minutes by convection function) Unox: 160 degrees Celcius 25 minutes Bake time and temperature may vary depending on oven performance. *Storage: Sealed at room temperature and can be stored for 3 to 4 days. The crumble is crispy only on the day it's made, and as time goes, the moisture from the muffin moves to the crumble, making the texture softer.
