Today we are sharing the Recipe for Gateaux Piment or as it is called as well Gato Pima or Chili Cakes. Gateaux Piment is probably THE MOST Mauritian snack there is and it’s finger licking good! Made from Yellow split peas, infused with herbs and spices, it’s a great Vegetarian and Vegan recipe as well. As usual, Chef Sha will share his Top Tips and secret ingredients on how to elevate this Recipe to make it one of a kind! Waiting time: Soak Yellow split peas overnight Cooking time: 15 min. Ingredients for 4 people: 500g Yellow split peas 1.5l Water 30g Watercress 10g Curry leaves 20g Green onions 6g Baking powder 10g Cumin Seeds 10g Chili flakes Salt to taste Vegetable oil for frying Equipment and Tools: Small and Big knife Chopping board Small and big Strainer Blender Small pot Instructions: 1. Soak the Yellow split peas in the Water overnight on the counter. 2. The next day, strain the Peas and keep some of the clouded water to facilitate the blending process. 3. Chop the Green onions, the Watercress and the Curry leaves into small pieces while still keeping some texture. 4. Chef Sha’s Top Tip: By adding the Curry leaves, the Gateaux piment will be extra fresh and have another layer of exotic flavors! 5. Slowly blend the Peas by adding as little Water as possible until the Peas form a smooth paste, but still having some grit to it. 6. combine the Pea mixture, then add in the Green onions, Watercress and Curry leaves. Give everything a mix before adding in the Spices. Season with Salt to taste. 7. Meal prep HACK: Freeze some of the mixture for future Snack time! 8. Only then, right before frying, add in the Baking powder. 9. Heat up a pot of Oil. Once hot all the way, drop small bite sized balls into the Oil. Be careful not to burn yourself. The shape or size of the Gateaux does not need to be exactly the same as we make ours “Grandma Style”. 10. Keep frying the Gateaux on high heat, while moving them around constantly until golden brown and crunchy. 11. Once ready, strain them and then place them into a bowl lined with paper towel to absorb some of the access oil. VOILÀ!! ENJOY!! 12.
