Shchi is a Russian-style cabbage soup. When sauerkraut is used instead, the soup is called sour shchi. Traditionally, shchi appeared in Kievan Rus around 9th century, soon after cabbage was introduced from Byzantium. The recipe, however, differed in many aspects and was not popularized until late 16th century. Today I would like to share my grandmother's recipe, which was passed on to her by her mother.
