This activity is designed to show the effect electricity has on chemical reactions. Setup the experiment as shown in the video and after a while you will see that the potato turns blue near the positive terminal. The potassium iodide solution dissociates in positively charged potassium ions and negatively charged iodine ions. The iodine ions travel to the positive electrode and react with the starch present in the potato to form starch iodide which is bluish in colour. Thus electricity produces chemical changes. This is the principle behind the working of rechargeable batteries.
