Ingredients: a. 1 whole Chicken (or 3 chicken legs if you don't have a whole chicken) b. 5 tablespoons of Extra virgin olive oil (EVOO) c. 1 Cinnamon stick d. 2 Bay Leaves e. 2-3 tablespoons of Allspice f. 1 teaspoon of black pepper g. 1 Carrot h. 1 Bell pepper (Orange or Yellow) i. 3 stalks of Celery j. 1 bunch of Parsley k. 3 Sweet Potatoes l. A handful of Green Beans m. 1/2 a Green Cabbage n. 1 Onion o. 7-8 cloves of Garlic p. 2 cups of dried and soaked Chick Peas q. 1/2 - 1 cup of Passata (strained tomatoes) depending on taste r. Couscous Recipe: a. In a large wide bottom pot, put EVOO, cinnamon stick, bay leaves, and heat for a minute b. Wash chicken with vinegar, dry well, and add black pepper, 1 tablespoon of allspice, and salt. c. Brown chicken on both sides for 5 minutes each. d. Remove chicken from pot, add chopped onions and garlic, and soften for 2-3 minutes. e. Add chopped parsley and cook for 2 minutes. f. Slice cabbage finely and add on top of the parsley, and saute for 3 minutes. g. Chop celery into tiny pieces and add them on top of the cabbage. Then saute for 3 minutes. h. Add carrots and bell pepper, and saute for 2-3 minutes. i. Add green beans and chick peas, and saute for 1 minute. j. Add chicken back to the pot, cover with boiling water, and add Passata and salt. k. Cover pot and cook on medium heat for 30 minutes. l. While it's cooking, chop sweet potatoes into medium-size pieces. m. Once the 30 minutes is up, add sweet potatoes to the pot, add salt, and make sure sweet potatoes are covered for at least 3/4 of the way. n. Cook for another 20-25 minutes on medium to low heat. o. Once the time is up, add a tablespoon of allspice and turn heat off. Cooking the couscous grain: a. In a large bowl, add 3 cups of coucous, 3 cups of boiling water, a big knob of butter, and salt to taste. Mix well and cover with a tea towel for 10-15 minutes.
