Maharashtrian Special Muttonacha Rassa INGREDIENTS: 1 large onion (sliced) 1 cup oil 7-8 cloves of garlic (chopped roughly) 1” ginger chopped 1 tomato chopped finely 1 star anise 1” cinnamon 5 cloves 15-20 peppercorns 1 cup of dry coconut Handful of freshly chopped coriander leaves For the curry 1 large onion finely chopped 1 kg mutton 1 tbsp of ginger paste 1 tbsp of garlic paste 1/2 of tsp Turmeric powder 2-3 tbsp of red chilli powder 2 tbsp of kanda-lasun masala 1-1.5 litre water Salt to taste Give a final stir METHOD: For Vatap (Masala - with onions coconut and masala) Heat a vessel and add a large onion (sliced) Add 1 tbsp of oil after onions dehydrate Add 7-8 cloves of garlic (chopped roughly) and 1” ginger chopped Roast till garlic is golden brown in colour Add 1 tomato chopped finely Mix well for a minute or two till the tomatoes are cooked and mushy Remove and Keep it aside for cooling Heat the vessel again Add 1 tbsp of oil Add 1 star anise 1” cinnamon 5 cloves 15-20 peppercorns Add 1 cup of dry coconut Sauté it till the coconut is crisply roasted Shut the flame Add handful of freshly chopped coriander leaves Remove in a mixing grinding jar and cool it before grinding into a fine smooth paste For the curry Heat a vessel Add 1/2 a cup of oil Add 1 large onion finely chopped and sauté it for a minute Add 1 kg mutton Seer the meat till the colour changes to brown Add 1 tbsp of ginger paste Add 1 tbsp of garlic paste Sauté for a minute Add 1/2 of tsp Turmeric powder 2-3 tbsp of red chilli powder Add 2 tbsp of kanda-lasun masala Fry again for a minute Add 1/4 cup of water Add vatap Mix well Add 1-1.5 litre water to the curry Add salt to taste Give a final stir Cover and give it a boil Let it cook on a med-low flame for the next 40-45 minutes For Jowarichi bhakri -Take Jowar ka aata accordingly -Add 1/2 a cup of hot water in it -Knead it into a soft dough -Add 1/2 cup of hot water or more if needed slowly and gradually -After the dough is ready, roll it flat & circle by patting it with your fingertips -Heat the tawa, put the bhakri, use a little water to spread it on bhakri and wait for water to dry -Flip it and let it cook, let it puff up Serve with Special Maharashtrian Rassa
