Russian Zefir (marshmellow) Russian zefir is very similar to marshmallow but absolutely different. It's based on apple puree. The texture of this Russian sweet is airy, light and is flavoured with real fruits, typically apples. Precise cooking time and exact measurement of ingredients is crucial to making zefir. Preparation and organization is also important. You will need: 130gr of baked apple puree 1/2 tsp of lemon juice 30gr of egg whites 200 gr of sugar 50 ml of water 7gr of Agar Agar 1. Pour the water Into medium sized saucepan, add sugar and Agar Agar. Mix well and set it aside to soak. 2. Prepare a tray where you will form your Zefir along with an Icing Bag with a right nozzle. 3. Place the saucepan on the stove and bring to boil. Simmer on the low flame (still boiling) constantly stirring for 7 min. 4. Quickly whisk apple puree with lemon juice and add egg white. Do not over do it. The texture should be frothy. 5. Take the sugar sirup off the stove and immediately start pouring it into the apple puree slowly constantly whisking. 6. Continue to whisk till the mixture is about 50 degrees calcium or till hard peaks. 7..Quickly transfer into an icing bag and get creative :) 8. When ready, set aside for 24 hrs. 9. Dust with icing sugar ENJOY!
