I planted Jerusalem artichokes in the ground a whole year ago now it's time to harvest. Come along and experience the 2025 NSW Spearfishing State Titles—rough weather, dirty water, long swims, and a few good fish, including the yellowfin bream I’d been hoping to find. I had a feeling it would pair beautifully with the rich earthy flavours of the Jerusalem Artichoke. Kicking it off with my time diving in the NSW state spearfishing titles where we managed to find some good conditions in amongst all the terrible weather we've had. No boats, no cars this one was a rock hop and a 4km swim through sharky, brown water. But it paid off. Back in the kitchen, I wanted to cook something that did the fish justice. I roasted the bones into a kind of gravy with the Jerusalem artichokes I’d been growing all year. Finished it with a fennel oil and served the grilled bream fillet crisped over coals, topped with thinly sliced fennel.
