Japanese pickled mackerel (Shime Saba) a Spearfishing Catch and Cook utilising Slimey Mackerel or Blue Mackerel. Usually just seen as bait fish these are hugely underrated table fish. With proper handling and preparation these fish are a premium resource massively under-utilised in my eyes. While many countries outside of Australia see these fish as an important resource the theme amongst Australians seems to be brushing them off as “just bait”. Gaining popularity within the restaurant world they are often called Blue Mackerel. Today I’m catching a few myself and I was lucky enough to find them in peak season, full of visceral and intramuscular fat. I’ll be curing the fillets in salt and then giving them a very light pickle in rice wine vinegar to make shime saba. A dish that we sought out everywhere we went in Japan. There’s just something about that cured oily fish with the sharp vinegar that tickles my tastebuds. At the end I’ll let you know what I reckon about this recipe and let you in on a little experimentation I did.
