Luke’s Lettuce Wraps INGREDIENTS: Sesame soy sauce: 4 tbsp soy sauce 6 tbsp hoisin sauce 2 tsp minced garlic 1 tbsp rice vinegar 1 tsp grated ginger 1 tbsp Sriracha sauce 2 tsp sesame seeds Sriracha sour cream: 3/4 c sour cream 1/4 c Sriracha sauce 1 lb lean ground beef 1 small white onion, diced 1 bunch green onions, chopped 3 cloves garlic, minced 1 c canned water chestnuts, drained & diced 1 tbsp chili garlic sauce 2 tbsp sesame seeds, divided 1 head butter lettuce 1 carrot DIRECTIONS: Make sesame soy sauce: In a medium bowl, whisk together soy sauce, hoisin sauce, garlic, vinegar, grated ginger, Sriracha sauce, and sesame seeds. Make Sriracha sour cream: In a small bowl, whisk together Sriracha sauce and sour cream until blended. Cook filling: In a sauté pan over medium heat, brown ground beef. Add white onion, green onions (reserving some for garnish), and garlic; cook until translucent. Add water chestnuts; cook for 2 to 3 minutes. Remove fat, lower heat to medium-low, and add chili garlic sauce, sesame soy sauce, and 1 tbsp sesame seeds. To serve, scoop a generous amount of meat mixture into each lettuce leaf and pipe or drizzle Sriracha sour cream over wraps in a zigzag motion.
