Stir all ingredients together, cover, leave in fridge overnight 2. In a small sauce pan, combine all ingredients 2. Allow to simmer whilst stirring occasionally for 2-3 minutes 3. Toast bread 2. Mash egg and dash of lemon juice in bowl with red chili flakes, salt and pepper 3. Mash avocado on both slices of bread 4. Top with egg, tomato, red onion, spinach 5. Slice in half, enjoy with fresh sliced cucumbers on the side Vegetable & chicken curry 300g organic free range (antibiotic free) chicken 1 onion, chopped 3 cloves of garlic, minced 3cm ginger, grated 2 tbsp curry powder 1 can chopped tomatoes 1 can coconut milk 1/2 head broccoli 1 zucchini 1-2 carrots Big handful of fresh spinach Directions: 1. Sautée onion, garlic & ginger for 3-5 mins 2. Add in sliced chicken and curry powder, cook for 5 mins 3. Add 1 can chopped tomatoes, rest of veggies, cook for another 10/15 mins 4. Lastly add in 1 can coconut milk 5. Cook until veggies are fully tender and chicken fully cooked 6. Before serving, add in spinach, allow 1-2 mins to wilt 7.
