/ old___fashioned_ [email protected] Old Fashion Baking Book https://www.yes24.com/Product/Goods/1... ======================================= Hello everyone! It's been a really long time since I've made Sachertorte. It's a chocolate cake that symbolizes Austria, and it's still sold at "Hotel Sacher" in Vienna, Austria. I also made it because I really wanted to eat it after a long time after watching the video below! • Original Sacher-Torte: A piece of Vienna The original Sachertorte is not coated with ganache, but with chocolate syrup. I made it by replacing it with ganache to make it a little less sweet. The conclusion is that it's not too sweet and it's really delicious! Feel like your home is the Austrian Sacher Hotel! 🎹 Ingredients for 18cm cake ✔Chocolate sheet 80g unsalted butter 72g yolk 40g Granulated Sugar (in yolk) 2g salt 2g vanilla bean paste (or extract) 100g Dark Couverture Chocolate 85g All-purpose flour 15g Almond flour 135g egg whites 75g Granulated Sugar (in white) 150g apricot jam ✔Ganache 100g fresh cream or whipped cream Dark Chocolate 100g ✔It's not too sweet, so I recommend using 50-60% dark chocolate. If you want it sweeter, add 10g of corn syrup to the ganache. I used 53% Valrhona Trophyllia. ✔Bake in a preheated oven at 170 degrees for 40 minutes (Smeg standard) ✔Store at room temperature BGM information Music by BGM Presidnet • [쓸쓸한 감성음악] Monologue | 가을이구나...🍁 Music by Jennifer Chung - Dragonfly - https://thmatc.co/?l=0CD68AD3
