I'm a big fan of Sichuan style Dan Dan Noodles. To mix a well-assembled Dan Dan Noodles until it's all greasy and red from the sauce underneath is one of the greatest pleasures of my life now. And the taste, oh, the taste! #NotAFancyCook #DanDanNoodles #ASMRCooking It's not been so long since I've been introduced to the dish but it's one of my favourite noodle dishes to make. Without further ado, here's a basic Dan Dan Noodle Recipe Marinate the meat Ground pork (beef/chicken also works) Chopped garlic Chopped ginger Shaoxing wine/Rice Wine (dry Sherry or wine works too) Soy sauce Black pepper Make the sauce Peanut butter Sesame Oil Dark soy sauce Soy sauce Sugar Chilli oil Sichuan peppercorn Chopped garlic Other ingredients Soba noodles (or whatever noodles you have) Spinach (or other green leafy things) Pickled mustard greens (optional, but considered key ingredient) Green onions (to garnish) Sesame seeds (to garnish) Mix ground pork (beef, or chicken variants work too) with chopped ginger and garlic, rice wine, soy sauce, and black pepper. Keep aside while you prepare other ingredients. Toast Sichuan pepper and grind it fine. Mix peanut butter, little sesame oil, dark soy sauce, regular soy sauce, sugar, chilli oil, Sichuan peppercorn together into a sauce consistency. Give it a little taste. Boil water for noodles. Cook noodles according to instruction. Add spinach (or whatever greens) at the last minute to blanch it. Cook the pork in a wok until everything’s dry. Add pickled mustard greens. Assemble everything in the order of sauce, noodles and greens, stir-fried items, and garnish. Mix well before eating. Note 1: I used peanut butter and sesame oil because I didn't have Chinese Sesame Paste. Note 2: If the dish feels dry while mixing, add some hot chicken broth (or any broth).
