Poi Saag Rai Masala Curry Recipe Ingredients: For the Curry: 1 bunch Poi Saag (Malabar Spinach), washed and chopped 2 tablespoons mustard seeds 2-3 green chilies (adjust to taste) 1 tablespoon oil (mustard oil preferred) 1 teaspoon cumin seeds 1 large onion, finely chopped 2-3 garlic cloves, minced 1-inch piece of ginger, grated 1 teaspoon turmeric powder Salt to taste 2 potato Water as needed For Tempering: 1 tablespoon oil 1 teaspoon mustard seeds 1 teaspoon Fenugreek seeds 2 dried red chilies A pinch of asafoetida (hing) Instructions: 1. Prepare the Mustard Paste: Blend the mustard seeds along with the garlic pods, coriander, cumin , black peppercorns and dry Red chillies into a smooth paste. Add a little water if necessary. Set aside. 2. Cooking the Poi Saag: Heat oil in a large pan or kadai over medium heat. Add mustard, Fenugreek seeds & dry Red chillies and let them splutter. Add chopped potato and saute until golden brown. Add turmeric powder and salt. Mix well. 3. Add the Mustard Paste: Add the prepared mustard-garlic paste to the pan and mix well. Cook for 2-3 minutes, stirring continuously, until the raw smell of the mustard paste goes away. 4. Add Poi Saag: Add the chopped poi saag/ Malabar Spinach to the pan. Mix well to coat the leaves with the mustard mixture. Add a little water if necessary, to adjust the consistency of the curry. Cover and cook for 10-15 minutes on low heat, stirring occasionally, until the saag is cooked and tender. 5. Finish the Curry: Mix well and let it simmer for another 2-3 minutes to blend the flavors. 6. Serve: Serve hot with steamed rice or roti.
