今天要公開S阿嬤在我的拜託下,終於願意公開的『純素全麥麵包食譜』!!!這款麵包少糖少油、全麥比例高、無蛋奶卻非常香軟可口溼潤。不像一般全麥麵包有苦味或太硬。吃過的都說讚! 小丫丫最最最愛的食物就是阿嬤做的麵包。每當阿嬤要開始做麵包時,他總是歡呼,然後眼睛亮亮的期盼著烤好的那一刻。 阿嬤的全麥麵包每次出爐,總是過不了兩天就被小孩跟大人們"解決"了。咬下去香香軟軟的,令人覺得很幸福。也有一種在吃湯種麵包的錯覺。怎麼也想不到純素(無蛋奶)的全麥麵包,可以這麼好吃啊。 趕快來試試看吧! Today I'm sharing a very special recipe for Grandma S's "Vegan Soft Whole Wheat Bread". Grandma S is finally willing to share it with my request! This bread is egg and dairy free, reduced in oil and sugar, high in whole wheat content yet very soft, delicious and moist. Unlike ordinary whole wheat bread, which is usually bitter tasting or too hard. Everyone loves Grandma S's whole wheat bread! Little Duckling's favorite food is Grandma S's homemade bread. Whenever Grandma was about to start making bread, he always would be so happy and be counting down to the moment the bread is out of the oven! The delicious bread is usually "gone" within 2 days at home. It is soft and tender. Simply wonderful. Come give it a try! 😋 🥦材料(份量:四長條麵包): 全麥麵粉 400g 白麵粉 200g 酵母粉 2 tsp 糖 50g 水 350g 油 30g 鹽 1/4 tsp 以下是不同口味的參考材料: 可可粉(巧克力口味) 1tbsp 蔓越莓乾(蔓越莓口味) 3 tsp 椰子絲(蔓越莓口味) 堅果(蔓越莓口味) 南瓜泥(南瓜口味) 🥦步驟: 1. 在食物處理機中,加入溫水 2. 加入發酵粉和糖。加入油 3. 攪拌3分鐘 4. 加入全麥麵粉和白麵粉 5. (巧克力口味) 加入無糖可可粉/(蔓越莓口味)加入蔓越乾,均勻攪拌7分鐘 6. 預熱烤箱至170F 7. 揉麵團增加Q度(揉至麵糰生筋)。把麵糰揉成長條狀,切成四等份(或依據烤盤調整) 8. 用桿麵棍桿平成長條形(大約1公分厚度),捲起來。調整大小,放進麵包烤盤中 9. 關上烤箱溫度。關上麵包烤盤蓋子,放入烤箱中讓麵包發約40分鐘至1小時(至麵糰差不多兩倍大小),取出麵包烤盤 10. 預熱烤箱至345F。放入烤箱中烤40分鐘 11. 取出麵包即可享用! 放涼後裝進袋子中麵包才容易保鮮哦。 Bon appetit 😋 🥦Ingredients(Servings: 4 loaves ): Whole wheat flour 400g All purpose flour 200g Yeast 2 tsp Sugar 50g Warm water 350g Oil 30g Salt 1/4 tsp Unsweetened cocoa powder(for chocolate flavouring) 1tbsp Dried cranberries(cranberry flavouring) 3 tsp 🥦Steps: 1. In a food processor, add in water (warm water if not using food processor) 2. Add in yeast, sugar, salt and olive oil 3. Mix well with heat for 3 minutes 4. Add in whole wheat flour and all purpose flour 5. (Chocolate flavouring) Add in unsweetened cocoa powder/(Cranberry flavouring) Add in dried cranberries and mix evenly for 7 minutes 6. Preheat the oven to 170F then turn off (for the dough to let rise later) 7. Roll the dough into a long roll. Divide it up evenly. 8. Roll out flat to about 1cm. Roll it up and shape to fit into the loaf pan 9. Close the lid of the loaf pan, put it in the oven and let the bread rise for about 40 minutes to 1 hour (until the dough is about doubled in size), take out the loaf pan 10. Preheat the oven to 345F.
