#eggmasalacurry #eggcurryrecipe #spicefeastrecipes Dhaba Style Egg Masala | Dhaba Special Egg Curry | Egg Masala Curry | Dhaba Style Anda Masala Recipe | Dhaba Style Egg Masala | Anda Curry Dhaba Style | Egg Masala Curry | Egg Masala Gravy | Egg Curry by Spice Feast Ingredients For the Fried Eggs 6 to 8 boiled eggs, cut into halves 3 tbsp oil 1 tsp salt 1 tsp black pepper powder 1 tsp red chili powder 1/3 tsp turmeric powder For the Gravy 3 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 3 small or 2 medium onions, finely chopped 2 to 4 green chilies, chopped 1 tbsp ginger-garlic paste 1 cup tomato purée 1 tsp salt 1 tsp red chili powder 1 tsp coriander powder 1 tsp black pepper powder 1/3 tsp turmeric powder 1 cup water 1 tsp kasuri methi (dried fenugreek leaves) Fresh coriander, chopped (for garnish) Instructions Step 1: Fry the Eggs Heat 3 tbsp oil in a pan over medium heat. Add salt, black pepper, red chili powder, and turmeric powder to the oil, stirring well. Let the spices cook for 1 minute to release their aroma. Place the boiled egg halves, cut-side down, in the pan and fry for 3 minutes per side, until golden brown and slightly crisp. Remove from the pan and set aside. Step 2: Prepare the Gravy In a separate pan, heat 3 tbsp oil over medium heat. Add mustard seeds and cumin seeds, allowing them to crackle for 1 minute. Add chopped onions and sauté for 6 minutes, stirring occasionally until golden brown. Mix in chopped green chilies and cook for 2 minutes. Add ginger-garlic paste, stir well, and cook for 2 minutes until fragrant. Pour in tomato purée and cook for 3 to 4 minutes, stirring occasionally until the oil starts to separate. Season with salt, red chili powder, coriander powder, black pepper, and turmeric powder, and cook for another 4 minutes to blend the flavors. Pour in 1 cup of water, stir well, and let the gravy simmer for 5 minutes until slightly thickened. Step 3: Combine & Serve Add the fried eggs to the gravy and gently stir to coat them with the sauce. Let the curry simmer for 2 to 3 minutes to absorb the flavors. Sprinkle kasuri methi and fresh chopped coriander for a fragrant finish.
