The BEST Cooking Class in Morocco - Tagine and mint tea with a Nonprofit

This was lots of fun, we got to meet some really nice people, the food was good and the cause worthy - what's not to love? We made Lamb Tagine with Prunes and Almonds and Chicken Tajine with Lemons and Olives. Our classmates made Vegetable Cous Cous, Chicken Pastilla and Beef with Prunes and Almonds. Amal Nonprofit helps to train women who need to support themselves and their children and who may not have the skills to do so by teaching them how to work in professional kitchens. The organization also supports the villages ravaged by the earthquake in 2023 - buying their almonds and walnuts and providing whatever assistance they can as they rebuild. The group has also learned Moroccan sign language to be able to training the hearing-impaired for kitchen work as well. They have a sign-language cafe and a pilot project have the deaf community run coffee carts.
