These nut-meat wraps would certainly satisfy anyone, even meat lovers like them. They are very easy to prepare and no cooking required. They are delicious, full of flavors, and very healthy. Serve them at a party or enjoy as a snack or even as a full meal. ***Walnuts (a main ingredient here) are full of healthy fats that are very good for you. Collard leaves are amazing as they have lots of iron and vitamin C! SUBSCRIBE for more Vegan Recipes:    / @vegan.enlightenment   NUTMEAT: 1 Cup of walnuts 2 tsp cumin 1 tsp coriander 1.5 tbsp tamari (or any other soy sauce) ***Put everything in the food processor and process until the mixture resembles ground meat SALSA: 1 bell pepper 1 medium tomato 2 cloves of garlic ½ medium onion 1 small lime 1/8 tsp cayenne pepper Cilantro Salt and Pepper to taste ***Roughly chop all the vegetables, then process in the blender or food processor until well combined but not mushy. Add lime juice, chopped cilantro, salt and pepper, and cayenne. Mix well to combine. ***Cut stems of your collard leaf, then place about 1/3 cup of nut-meat mixture onto the leaf, top with salsa, and then roll it up. ENJOY!
