Welcome Back to the Kitchen! My wife joins me for this very special episode where she bakes the very best cake on the face of the earth, Guinness Chocolate Cake. It has Guinness beer, Irish whiskey, and Bailey's Irish Cream. Yeah... I know! I would have proposed after one bite of this cake if we hadn't already been married. Have a great day! ============================================= Guinness Chocolate Cake Ingredients • 1 cup Guinness Beer • 1 cup Unsalted Butter (softened) • 3⁄4 cup Dutch Cocoa • 2 cups Flour • 2 cups Sugar • 1 1⁄2 TSP Baking Soda • 3⁄4 TSP Salt • 2 Eggs • 2/3 cups Sour Cream Instructions Preheat oven to 350 degrees Fahrenheit. 1. Combine Guinness and butter over medium heat and bring to a simmer. 2. Add cocoa and whisk until smooth. 3. Cool slightly. 4. Combine flour, sugar, baking soda, and salt. Set aside. 5. Combine eggs and sour cream. Beat until mixed. 6. Add chocolate mixture and mix. 7. Add dry ingredients and mix. 8. Pour into two 8" cake pans, greased and lined with parchment paper. 9. Bake for 28-35 minutes. Irish Whiskey Ganache Ingredients • 8oz Bittersweet Chocolate • 2/3 cup Heavy Cream • 2 TBS Butter (softened) • 2 TSP Irish Whiskey Instructions 1.Finely chop chocolate and put in bowl. 2.Heat cream until simmering. Pour over chocolate. 3.Let sit one minute then stir. 4.Add butter and whiskey. 5.Cool until thick, but soft enough to pipe. Bailey’s Frosting Ingredients • 2 cups unsalted butter (softened) • 5 cups powder sugar • 6 TBS Bailey’s Irish Cream Instructions 1.Whip butter on medium-high speed for five minutes. 2.Reduce speed and add powder sugar. 3.Add Bailey’s Irish Cream and beat on medium- high until fluffy (about 2-3 minutes). Put one 8" cake on a cake board and spread frosting on top. Add a layer of chocolate ganache. Add second 8" cake on top of first. Frost entire cake with and drizzle with remaining ganache. Store refrigerated.
