Irish Beef Stew 1 1/4 pounds stewing beef 2 tablespoons flour salt and black pepper to taste 2 tablespoons butter or olive oil 1 1/2 cups beef stock or broth 1 1/4 cups Guinness beer 3 potatoes, chopped 1-2 carrots, chopped 1 small onion, chopped 1 leek, chopped 2 sprigs fresh thyme 2 bay leaves 1/2 cup pearl barley Chop the beef into large chunks, season with salt and pepper, lightly coat in flour. Set aside. Boil the potatoes for 20-30 minutes to soften them but do not fully cook them. Set aside. Add oil or butter to a pan and heat to medium and sear the beef on all sides. Remove the beef, add carrots, onions, leeks, salt and pepper. Pour in the Guinness to deglaze the pan, scrapping the bottom. Simmer for a few minutes. Then add the seared beef, potatoes, stock, thyme, and bay leaves. Cover and cook on low for 2 hours. Toast the barley in a separate pan over low-medium heat for a few minutes. Add the barley to the pot, then cook for another hour. Remove the bay leaves and thyme. Serve with bread or pastry. Serves 4-6 BetterWithBrigita@gmail.com Welcome to my channel.
