Learn to make the most decadent triple chocolate muffins ever- which are EGGLESS! This tutorial walks you through the step by step process so you’ll be able to make this even if you’re an absolute beginner! They are so soft, moist and super rich in chocolate flavour!🍫 Ingredients: (FOR THE GANACHE)- • Chopped dark chocolate- 65 gm (1/2 cup) • Fresh cream- 50 mL (1/4 cup) (FOR THE MUFFINS)- • Yogurt- 180 gm (3/4 cup) • Castor sugar- 170 gm (3/4 cup + 2 tbsp) • Oil- 105 mL (1/2 cup) • All purpose flour (maida)- 130 gm (1 cup) • Corn flour- 10 gm (2 tbsp) • Cocoa powder- 35 gm (7 tbsp) • Baking soda- 1 tsp • Baking powder- 1/2 tsp • Salt- 1/2 tsp • Milk- 60 mL • Coffee powder- 2 tsp • Chocolate chunks/chocochips for topping Method: 1. Prepare ganache by melting chopped dark chocolate and fresh cream over a double boiler. Let it cool to room temperature. 2. Sift together all-purpose flour, corn flour, cocoa powder, baking soda, baking powder, and salt. 3. In a bowl, mix yogurt and sugar until dissolved. Add oil and mix well. 4. Mix coffee powder with milk and add this to the yogurt mixture. 5. Add half the dry ingredients, mix, then add the rest and form a smooth batter. 6. Fill 7 chunky muffin liners with batter and top with chocolate chips or chunks. 7. Bake at 170°C for 20–22 minutes or until a toothpick comes out clean. 8. Once cooled, fill the muffins with ganache.
