A classic Middle Eastern favourite made with cooked chickpeas, tahini, lemon, and garlic — smooth, nourishing, and comforting. Ingredients 1 can chickpeas, drained (or cooked chickpeas) 2 garlic cloves Lemon or lime juice, to taste 2–3 tbsp tahini Olive oil Salt, to taste Pepper, to taste ½ tsp cumin A few ice cubes (for extra creaminess) Method Add chickpeas, garlic, lemon juice, tahini, olive oil, salt, pepper, cumin, and ice cubes or cold water to a blender or food processor. Blend until smooth and creamy, scraping down the sides as needed. Adjust seasoning and consistency to the liking. To Serve & Decorate Transfer the hummus to a serving dish and smooth the top. Drizzle with olive oil and sprinkle paprika and sumac. For a simple decorative finish, mix paprika with olive oil, dip a fork into it, and gently create fork patterns around the edges.
