Preheat oven to 400°F (200°C). 2. Wash the 2 eggplants and place them whole on a baking tray. 3. Roast for 35–45 minutes, turning halfway, until the skin is wrinkled and the inside is very soft. 4. Remove from oven and allow to cool slightly. 5. Peel off the skin completely. 6. Mash the eggplant until smooth. 7. Add the 4 cloves of minced garlic, chopped onion, and salt. 8. Heat oil until hot, then pour it over the mixture. 9. Mix well and serve warm.
