ETON MESS What’s an Eton Mess? An English dessert created at and named for, Eton College. But it’s certainly not a mess. In fact, it’s quite pretty and can be served casually for an impromptu gathering or served gussied up for a formal affair. Then again, if you simply find yourself with the ingredients on hand, you can whip up a couple for a weeknight treat. It also happens to be Prince William’s favorite dessert! In some ways, think of an Eton Mess as a trifle without the cake or alcohol. It’s a layered dessert comprised traditionally of strawberries, strawberry sauce, whipped cream and coarsely crushed crisp meringue – the main reason you want to use a glass for serving – to show off all the layers and colors. The version I share in my recipe uses raspberries and blueberries for contrast…and to give a nod to the colors of the English flag. Eton Mess is probably one of the simplest and quickest desserts that can be made, especially if you have store-bought meringues on hand. In fact, if you don’t have any or don’t like meringue cookies, you can substitute something else crunchy with a subtle flavor…like buttery shortbread cookies! Either way, just be sure to assemble and serve Eton Mess not too far in advance or else the meringue will become soggy, and that just wouldn’t be proper!
