Make these super crispy and delicious Aloo Matar Samosas for your Ramadan Iftar table 🌙✨ A perfect vegetarian snack filled with spicy potatoes, peas, and crunchy peanuts — crispy on the outside and flavorful on the inside! Serve hot with ketchup or chutney and enjoy with family. Recipe: First, in a pan add oil and fry a handful of peanuts. Take them out and keep aside. In the same pan add cumin seeds and 2–3 dried red chillies. Add ½ chopped onion and fry until golden. Then add salt to taste, 1 tsp red chilli powder, ½ tsp turmeric powder, and 1 tsp black pepper powder. Cook well. Add peas and mix everything nicely. Pour ½ cup water, cover and cook until the moisture disappears. Then add 2 boiled mashed potatoes and cook for 5 minutes. Add chopped green chillies, 1 tsp chaat masala, fresh coriander leaves, and the fried peanuts. Mix well — the stuffing is ready. For the dough: In a bowl take 2 big bowls of flour. Add salt to taste, 1 tsp kalaunji, 1½ tsp ajwain, and 2 small cups oil. Knead into a slightly hard dough (this helps make the samosas extra crispy). Take a small dough ball, roll into a puri and cut into rectangle shape. Add some filling, fold into half, seal with fingers, and press with a fork to make a design. Fry on low flame until golden and crispy.
