Hi Friends! Let’s whip up a fluffy roll cake together today. The recipe I’m sharing below makes a super soft, melt-in-your-mouth cake that stays crack-free when you roll it. Ready? ----- 00:00 - 00:38: Separating egg whites and yolks 00:39 - 01:50: Making egg yolk batter 01:51 - 02:32: Whip egg whites 02:33 - 04:12: Folding and pouring into the mold 04:13 - 06:57: Preparing and rolling the cake 06:58 - 08:14: Slicing and enjoying ----- Pan: 28x28cm square tin ----- INGREDIENTS: 15g butter 35g oil 50g fresh milk 42g all-purpose flour 28g cornstarch 90g egg yolks 165g egg whites 95g sugar 70g pineapple jam Bake: 40 mins at 150°C, middle rack (5-rack oven) ----- METHOD: 1. Preheat oven to 160°C, top & bottom heat. Line tin with parchment. 2. Separate egg whites and yolks. 3. Heat water to a simmer. Melt butter, milk, and oil in a bowl over the pot (double boiler) until fully melted. Test: dip finger, should feel warm but bearable (50-55°C). Too hot (over 65°C) will curdle the batter. 4. Remove from heat, sift in flour, stir until no dry spots remain. 5. Mix in egg yolks until smooth. 6. Whip egg whites on high (4/5 speed) to firm peaks (tip curls slightly when whisk is lifted). 7. Fold 1/3 whipped whites into yolk mix to lighten. 8. Fold remaining whites in 2 batches. 9. Pour batter into tin from 20cm height to pop large air bubbles. Smooth surface. 10. Bake at 150°C for 40 mins. 11. Check doneness: press top, it should spring back. Remove, peel off parchment, cool. 12. Trim edges, spread pineapple jam, roll cake. 13. Wrap in parchment and cling film, chill 3-4 hours before slicing. TIPS FOR SUCCESS -Place the egg whites in the freezer for about 10-15 minutes to keep them deeply chilled, which helps them whip up more easily and stabilizes the air bubbles. -Make sure the temperature of the butter, oil, and milk mixture after melting over a double boiler is between 50-55°C to prevent it from getting too hot and causing fat separation when mixing with the flour. -Trim the edges of the cake as shown in the video to facilitate easier rolling.
