Ingredients: 2 teaspoons of clear vanilla flavor (added to your milk gelato recipe) 50g dark chocolate wafers or 50g 60-75% dark chocolate + 1/2 teaspoon neutral flavored oil (such as canola or sunflower oil) The above makes enough stracciatella chocolate for a 1/2 batch of stracciatella gelato if splitting a quart of milk gelato into two flavors, as shown in this video. If you're making a full quart of stracciatella gelato-only, double the chocolate recipe.
