This recipe is maintenance only due to the turkey pepperoni which is no longer approved for weight loss on Optavia. Loaded Cauliflower Pizza Bake 4 servings 1 Lean, ¼ Healthy Fat, 3 Greens, 3 Condiments per serving 4 C. cauliflower florets (14 oz.) (8 Greens) ½ C. bell peppers (any colors), diced (2.63 oz) (1 Green) ½ C. mushrooms, chopped (1.23 oz) (1 Green) ½ C zucchini, cubed (1.99 oz) (1 Green) ½ C green onions, sliced (1 Green) 6 oz. cooked ground turkey (1 Leaner – requires 1 Healthy Fat) 1 C. reduced fat cheddar, shredded (1 Lean) 1 C. part skim, low moisture mozzarella (1 Lean) 4 oz. turkey pepperoni, diced (1 Lean) 6 T. light cream cheese (6 Condiments) 6 T sour cream (4 Condiments and 1 Healthy Fat) ¼ C. reduced fat parmesan (between 3-6 gr. Fat) (2 Condiments) Preheat oven to 350. Spray a 9x13 baking dish with non-stick spray. Steam cauliflower florets until soft. Drain and mash, leaving it a bit chunky. Stir in ½ of the pepperoni, green onion, sour cream, cream cheese, and ½ c of the cheddar. Place mixture at the bottom of a greased 9x13 baking dish and set aside. In a skillet, brown ground turkey. Add in peppers, mushrooms, and zucchini. Cook until veggies are soft. Layer veggies on the cauliflower. Top with remaining ½ c cheddar and 1 C. mozzarella. Sprinkle with remaining diced pepperoni. Sprinkle with parmesan cheese. Bake at 350 for 20 minutes. Uncover and bake an additional 5-10 minutes until top is golden brown. Divide evenly into 4 servings. Calories: 431 Protein: 39.55 gr.
