At its heart is pa amb tomàquet (Catalan tomato bread) made with ripe tomatoes, toasted bread, olive oil, garlic, and salt. It’s a staple in Spanish tapas culture and one of the easiest ways to bring Mediterranean flavor to your table. Honestly, you don’t need anything more on a hot summer day 🍅☀️ I made two versions: one topped with chives, Jamón Serrano, and crispy parsley, the other with anchovies and chives. Which one are you grabbing first? 👇 🍅 Start with a few great summer tomatoes—grate them on a box grater, discard the skins, and strain the pulp in a fine sieve to remove excess liquid. Mix with a generous drizzle of extra virgin olive oil and a pinch of flaky salt, adjusting to taste. ☘️ Chop some fresh chives, and quickly fry a few parsley leaves until crisp. These will be your garnish. 🍞 Slice some rustic sourdough bread, about 2 thick slices and pan-fry them in the oil from a jar of anchovies (about 2 to 3 tablespoons or 30–45 ml). If there isn’t quite enough oil to coat the pan and crisp the bread, supplement with a little more olive oil. Fry the bread over medium heat until golden brown and crisp on both sides. While it’s still warm, rub the surface with a cut clove of garlic to infuse it with a subtle garlic flavor. 🍅 Spread the tomato mixture generously over both slices of bread. 🍽️ For the first slice, sprinkle chopped chives over the tomato, lay a few slices of Jamón Serrano on top, and finish with the crispy parsley. For the second slice, top the tomato layer with anchovy fillets and a final scattering of chives. Enjoy while it’s hot and crisp.
