Hello and welcome to Old Ways Gardening and Prepping.🍀 Would like to welcome you each out on another adventure with me to forage the beautiful and delicious Cercis canadensis, or the Eastern redbud tree for blossoms. The timing this year was perfect and I was blessed with a huge harvest in under 30 minutes. Wanted to harvest more of the buds and hope to head back this coming weekend to do so. They are one of the first Native trees in America to bloom. Always look forward to seeing them and sadly they are becoming fewer in the wilds. So let's talk a little bit about their medicinal benefits. A tea made from the inner bark is highly astringent. Used in the treatment of fevers, colds, flu, influenza, diarrhoea and dysentery, it is also a folk remedy for leukaemia. A cold infusion of the roots and inner bark have been used to treat various chest complaints including whooping cough and congestion. This is just to name a few wonderful benefits of this amazing tree. Now to talk about the jelly. It has an amazing smell as it is cooking and is extremely floral. Now it can be fussy to get to gel but don't worry always have extra sugar on hand just in case. 2 cups of packed Eastern redbud tree blooms 4 cups of boiling water 1 large storage jar to brew tea/infusion in 1 Tbsp of lemon juice 1 box of regular pectin 2 1/2 cups of cane sugar to start out with Hope this video encourages you to go out and see the beauty of these trees as well. Then partake of their blessings. Just remember that the window to harvest from them is less than 2 weeks. Please harvest responsibly as well.
