Soak for 15 minutes. 2:02 - 2:31 Step 1: Slice onions and caramelize in a pan with a drizzle of olive oil (or about 3 tablespoons). 2:32 - 3:40 Step 2: Add meat to a large bowl beside your bowl of soaked bulgur and a 3rd bowl of ice water. Before mixing, add salt and pepper to meat (1/2 teaspoon of pepper, teaspoon of salt, add more or less based on preference). Step 3: Wet hands and begin to knead the meat before mixing in the bulgur. Use ice water to help keep the meat together. 3:41 - 4:25 Step 4: Add bulgur to the bowl. Grate a small piece of onion on top of the mixture. Begin mixing with your hands, using the ice water to help keep the mixture together. 4:26 - 5:30 Step 5: Once everything is evenly mixed, take out a large baking pan. We use a round baking pan (you can use any kind of baking sheet or casserole dish). Drizzle olive oil over the pan to coat the bottom. Add caramelized onions to pan and spread evenly around the pan. 5:31 - 6:17 Step 6: Add meat mixture to pan by making patties with your hands and flattening them on the pan in patches (patties can be as thick or as thin as you’d like). 6:18 - 6:42 Step 7: Once you add your last patch, flatten and form the mixture on the pan, making sure it’s flat and all patches are together. Use spoon to flatten the edges. 6:43 - 7:52 Step 8: Cut your kibbeh with a knife before baking it. How you cut it is up to you! 7:53 - 8:09 Step 9: Once it is cut, put a finger in the center of the pan and make a hole (you will be adding olive oil to it shortly). Then, use a fork to make any designs you’d like on the kibbeh. This is optional! 8:10 - 8:20 Step 10: Pour olive oil in the center hole and then drizzle it around the top of the pan. 8:21 - 8:57 Step 11: Put oven on broil and add kibbeh pan to the bottom shelf. Let broil for 15-20 minutes or until the top is golden brown, checking it every few minutes. Step 12: Put temperature at 375 degrees and bake for another 15-20 minutes or until bottom is cooked. 8:58 Step 13: Once baked, take kibbeh out of the oven and recut it. Use a spatula to remove it with the onions and flip it onto a platter.
