This stew is simple, affordable, and nutritious, plus everyone loves how it tastes! In Morocco, this recipe is simply named after its main ingredient, ""lentils"" or ""Adas."" In English, however, it is usually referred to as a soup or stew. It is a simple one pot meal that takes only 40 minutes from start to finish. Lentils with carrots is a delicious vegetarian (easily turned vegan) meal that is made with lentils and carrots as its main ingredient, along with fresh parsley and cilantro, tomato paste, onions, garlic and warm spices (including ginger, paprika, chili, cumin, and turmeric). The traditional lentils used in this recipe are known as French Lentils, which cook quickly but maintain their shape after cooking. The carrots in the dish add a wonderful note of sweetness to the dish, but if you're not a fan of carrots, feel free to replace them with pumpkin or the squash of your choice. Lentils are a great source of plant based protein, fiber and vitamin B, which makes it a wholesome meat substitute. If you eat fish however, this dish is highly recommended as Moroccans love to pair it with fried and grilled fish, especially sardines. Make sure to serve the lentils with some Moroccan bread, drizzle some olive oil on top with a dash of fresh herbs for a pop of color, then enjoy! Ingredients For the sauce 1 large ripe tomato 1 medium white onion 2 garlic cloves 1 teaspoon salt 1 teaspoon paprika 1/2 teaspoon ground black pepper 1/4 teaspoon chili powder (or to taste) 1/2 teaspoon ground ginger 1/2 teaspoon ground turmeric 1/4 teaspoon ground cumin 4 tablespoons olive oil 100ml (1/2 cup) water 1 heaping teaspoon tomato paste 1 small bouquet of parsley and cilantro 200ml (1 cup) water For the carrots 2 medium carrots 100ml (1/2 cup) water For the lentils 250g (9 ounces) French lentils Water to rinse the lentils 100ml (1/2 cup) water Steps Step 1: Preparing the sauce 1- Cut the tomato in half and remove its seeds. 2-Grate the tomato into a large pot using the large holes of a grater. 3- Peel and rinse the onion, then cut it in half. 4- Grate the onion using the large holes of the grater. 5- Peel the garlic and grate it using the small holes of a grater. 6- Season with salt, paprika, pepper, chili powder, ginger, turmeric, and cumin. 7- Add olive oil and water, then mix to combine. 8- Place the pot on medium heat, then cook for 5 minutes. 9- Finely chop the cilantro and parsley, then add it to the pot. 10- Add the tomato paste and remaining water, then cook for another 5 minutes.
