INGREDIENTS ========== 1/2 tbsp olive oil 3 green onions (white section only), julienned Thumb sized piece of ginger, peeled and julienned 2 tbsp light soy sauce 1/4 cup water 1 tbsp maple syrup 1 tsp sesame oil 1/4 tsp white pepper High temperature oil (I used organic canola oil, but avocado, grapeseed, peanut, or sunflower oils will do) 1/2 block of extra firm tofu 1/2 cup potato starch, or corn starch Roughly chopped cilantro for garnish DIRECTIONS ========== SAUCE: 1. In a sauce pan, on medium heat, throw in the olive oil, julienned green onion whites, and julienned ginger 2. Sautéed for a couple minutes just until the veggies start to sweat 3. Pour in the light soy sauce, maple syrup, sesame oil, and white pepper 4. Let this ingredients heat up in the pan for about 30 seconds and put it aside FRIED TOFU: 1. Drain and pat dry tofu 2. Cut 1/2 tofu block in rectangular shapes (roughly bite sized) 3. Heat up oil in a pot at around medium heat (use a thermometer to track temperature of oil) 4. While oil heats up, coat tofu with potato starch 5. Once your oil is around 350 degrees Fahrenheit, gently put drop in the coated tofu and deep fry them for about 1 minute 6. Place fried tofu in strainer and sprinkle a little salt to keep the outer layer crispy 7. Plate it up and make sure to garnish with the greens of the green onions (sliced) and roughly chopped cilantro Enjoy!!!
