Cooking is a big part of any canoe or camping trip, whether you go into the Boundary Waters or elsewhere. We show you how to cook up a couple of easy and delicious outdoor meals. First, we’re going to cook a version of a one-pot wonder. The meal we cook in this video is a couscous-based one-pot wonder, and it’s as simple as it is delicious. Here’s how you do it 1. Add about 3 cups of water to a pot 2. Add in a packet or so of dehydrated or freeze-dried meat – Trailtopia has some great options. Textured Vegetable Protein (TVP) is a great vegan substitute! 3. Sprinkle in some dehydrated vegetables (don’t fret about the exact amount, after all, this is wilderness cooking!) 4. Bring it all to a boil. Reduce your heat and let it simmer for about ten minutes to rehydrate the veggies and meat. 5. Add one-and-a-half cups couscous. Stir, cover and remove the pot from the heat. 6. Let it sit for about 5 minutes then taste it to see if everything is properly rehydrated, if not, add some more water and stir. 7. After you’ve dished it out, slice off a piece of cheese (block cheese can remain shelf stable for several days) and eat. BEANS AND RICE Another easy one-pot wonder is beans and rice. This meal is nutritious, loaded with protein, and hand’s down, is one of the best things you can cook on trail. Here’s how you do it for two people 1. Fill your pot with 4 1/2 cups of water and 1 cup of rice 2. Toss in some variety of meat or meat substitute 3. Once it reaches a boil, bring the heat down, let it simmer until the rice cooks – about 10 minutes. (note – the water will NOT be absorbed at this point). 4. Add one cup dehydrated refried beans (you can find these in most grocer’s bulk sections) 5. Stir in some taco seasoning. 6. Remove from heat and let the beans absorb the water, about 5 – 10 minutes. Now, when it comes to washing dishes, the one thing you don’t do is wash the dishes directly in the water. Instead, scrape or lick the pot clean. If you can’t eat any more, pack the uneaten food in a trash bag. Gather water and with a minimal amount of biodegradable soap, clean your pots and dishes at least 200 feet from camp.
