Perfect for a quick weeknight dinner or a weekend treat! Ingredients (Serves 2–3): • 200g penne pasta • 2 tbsp olive oil • 3 cloves garlic, minced • 1 small shallot, finely chopped • 1 tsp chilli flakes (adjust to your heat preference) • 2 tbsp tomato paste • 60ml vodka (about ¼ cup) • 120ml double cream (½ cup) • 30g Parmesan cheese, grated (plus more to serve) • Salt and pepper, to taste • Optional: a knob of butter for richness • Fresh basil, to garnish Instructions: 1. Cook the pasta: Boil the penne in salted water until al dente. Reserve about ½ cup of pasta water before draining. 2. Make the sauce base: In a large pan over medium heat, add the olive oil. Sauté the garlic, shallots, and chilli flakes until soft and fragrant (about 2–3 minutes). 3. Tomato paste + vodka: Add the tomato paste and stir constantly for 2–3 minutes to deepen the flavour. Pour in the vodka and simmer for 2–3 minutes to let the alcohol cook off. 4. Creamy goodness: Lower the heat and stir in the cream. Let it bubble gently for 2–3 minutes. Add a splash of pasta water if it looks too thick. 5. Add cheese & seasoning: Stir in the Parmesan. Season with salt and pepper. Optional: Add a knob of butter for extra richness. 6. Toss the pasta: Add the cooked penne to the sauce and toss until fully coated. Add a splash more pasta water if needed to loosen the sauce. 7.
