Smokey Honey Chicken (Adapted from Mel's Kitchen Cafe) 1c tomatillo salsa 1/4c honey 1T liquid smoke 2t chili powder 1t salt 1t dried oregano 1t cumin 2-3 cloves garlic, minced 1/2 t paprika 1/4 t pepper 1/2 c chopped cilantro 4 chicken breasts Combine all ingredients besides the chicken and cilantro and whisk together in a bowl. Pour salsa mixture into crock pot and nestle the chicken breasts into the salsa. Cook on low for 6-7 hours or high for 4-5 hours. Pull chicken with two forks or use the trick method I showed in the video. ;-) Serve with rice or use for quesadillas, tacos, etc! This is so versatile! 85g chicken: 131 cals/2g fat/8g carbs/20g protein Turkey Basil Meatballs 1lb extra lean ground turkey 2 eggs 1/2c panko bread crumbs 1/4c. Parmesan cheese 1T fresh basil 2-3T fresh parsley Salt and pepper to taste Mix all ingredients together and form into 20 small balls. Bake at 400 for 15-20 min. Macros per meatball: 42 cals/1g fat/1.3g carbs/6.5g protein Macros for four meatballs: 169 cals/4g fat/5g carbs/26g protein
