Cut 3-4 cups of fresh washed sliced Okra, place in large mixing bowl. Whip two(2) eggs together in a small bowl. Pour egg mixture over the cut Okra and toss thoroughly to coat. Sprinkle garlic and onion powder on the Okra to taste (approximately 1/4 - 1/3 Teaspoon each) Sprinkle a few pinches of Cayenne pepper to taste if desired. (1/8 Teaspoon do it bout right) Add salt and pepper to taste Toss the Okra , egg and seasonings very well making sure seasonings are well distributed. In another mixing bowl, mix together one(1) cup of yellow corn meal with 1/2 cup all purpose flour. Add a few pinches of salt and pepper to taste. Pour the corn meal/flour mixture into a large storage bag. Place the egg/seasoning coated Okra into the storage bag and toss around to thoroughly coat the Okra with the breading. Heat approximately one(1) inch of high heat cooking oil in large skillet or heavy bottom pot. *I used a mixture of half vegetable shortening and vegetable oil. Once oil has reached a frying temperature of 350-375 degrees, drop the breaded Okra into the frying oil. Do NOT disturb the Okra for the first couple of minutes to allow the breading to set up. Allow the Okra to fry until golden brown. Remove to a paper towel lined bowl or place the Okra onto a slotted rack for air circulation and drainage. -Quick/Easy Remoulade Sauce (Awesome sauce for fried green tomatoes...........gauranteed) Mix together: 1/2 Cup Mayonnaise Two(2) Tbsp. Creole Mustard 1 1/2 Tbsp. Ketchup One(1) Tbsp. Minced Garlic One(1) Tbsp. Paprika One(1) Tsp Louisiana Hot Sauce 1/4-1/2 Tsp Worcestershire Sauce Salt/Pepper to taste Add a splash of Lemon Juice for a touch of acidity if desired. Once mixed together well. Place in refrigerator for a few hours to thicken and blend together well.
