It is important to ensure there is a source of vitamins for cosmonauts during long-term autonomous space missions to the Moon or Mars. Deep-frozen or canned vegetables, fruit, and greens cannot retain necessary nutrients for two-three years, which is about the amount of time a long space mission normally lasts. The shelf life of synthetic vitamin complexes is also no more than a year. Space nutrition experts point out the need to grow vitamin-rich greens and vegetables right on board a spacecraft. What crops are most suitable for growing in zero gravity? What difficulties did scientists face when trying to grow vegetables and greens in space?
