Parsi Salli Gosht: Parsi community is very kind hearted and loving. I love Parsis. Their recipes are unique. Today I have chosen one of the best recipes from Parsi cuisine, SALLI GOSHT. Hope you will love it. Ingredients: Mutton cut into curry pieces. 1 kg. Onions. 400gms Tomatoes. 2 medium Ginger garlic paste. 2 tablespoonful Green chillies. 4-6 Turmeric powder. Half Tspoon Red chilli powder. 1 Tspoon Kashmiri Red chilli powder. 1 Tspoon Coriander powder. 2 Tspoon Cumin powder. 2 Tspoon Meat masala powder. 2 tablespoonful Parsi vinegar (brown vinegar) 1 tablespoonful (If you don’t have, use 1 Tspoon white vinegar) Jaggery. (Gud). 1 Tspoon Salt to taste Green cardamoms. 4 Black cardamoms. 2 Cinnamon sticks. 2” Cloves. 7-8 Black pepper corns. 12 Potato sallies to garnish mutton (Available at Indian grocery stores. If you don’t find, prepare in your kitchen. You will find many channels to guide you. You can store it for 1 month. It is very good for munching also.) Oil. 3-4 tablespoonful Method: 1. Clean and wash mutton in salt and white vinegar water. 2. Marinate the mutton with ginger garlic paste, all powder masalas except salt and keep it in fridge for 30 minutes to 1 hour. 3. Meanwhile in a pressure cooker, heat oil and add whole hot spices. (Green cardamoms, black cardamoms, cinnamon, cloves & black pepper corns). 4. When aroma is released (after 1 minute) add chopped onion and green chillies. 5. Sauté till golden brown. 6. Add chopped tomatoes 7. Add salt to taste. 8. Sauté well till tomatoes are soft. 9. Add marinated mutton and mix well. 10. Sauté for 15 minutes. 11. If needed add splash of water. 12. Add Parsi vinegar and jaggery and mix well. 13. Cook for 5 minutes on medium flame. 14. Add 1.5 cups of water. 15. When boils, cover the lid of pressure cooker. 16. Blow 1 whistle on high flame and 3 whistles on medium flame. (Total 4 whistles) 17. When steam is released, open the lid and check the mutton, whether it is tender. 18. If it is not tender, blow more whistles accordingly. 19. I blew 1 more whistle 20.
