An easy-peasy Butter Cake recipe for a buttery, soft and moist cake that can be cherished at any time of the day! I would recommend having it with your afternoon/evening cup of tea or coffee. This cake has a texture and crumb that melts upon your tongue, with just the right bit of sweetness. Ingredients: (1 U.S. Cup= 240 ml) 120 grams (1/2 Cup) Salted Butter 120 grams (1/2 Cup+ 1 Tablespoon) Powdered Sugar (Caster Sugar) [You may reduce the Sugar by a tablespoon for less sweetness] 3 Whole Eggs 1 teaspoon Vanilla Essence 120 grams (1 Cup) All Purpose Flour (Maida) 1 teaspoon Baking Powder Baking Tin Size: 8"*4"*2" This recipe yielded a 500 grams cake. Baking details: Preheat the oven at 140°C. First, bake the batter at 140 degrees Celsius for 40 minutes and then increase the temperature to 180 degrees Celsius for 8 minutes (or till the top is sufficiently browned). Tips: -Creaming the Butter and Sugar is important for a light, airy batter and that will result in a soft, airy cake. -Use room temperature ingredients. The butter and eggs must be brought to room temperature, if chilled. -Running a toothpick/skewer through the batter breaks any large air pockets within the batter. Tap the tin upon the kitchen counter before baking, to eliminate air bubbles and flatten the top. -Do not open the oven door frequently (and certainly not before half the baking time); that causes fluctuations in temperature. Check when it approaches the end of its baking time. A skewer inserted at the center must come out clean. -Once baked, turn off the oven, and let the cake cool within the the oven with the door slightly open, for 20 minutes. Then, let it cool on a cooling rack to room temperature. This prevents the cake from excess contraction on cooling.
