No-Churn Sweet Corn Ice Cream - From Our Mexico Trip With Friends - Glen And Friends Cooking In July 2022 Glen And Friends met up in Mexico City for a Mexican food tour. We ate street food, we took cooking classes, and we saw some of the cultural highlights of Mexico City and Oaxaca. This sweet corn ice cream was one of the recipes that we made during a cooking class in Oaxaca. Ingredients: 2 cobs sweet corn 250 mL (1 cup) milk 500 mL (2 cups) 35% cream 1 can condensed milk Method: Cut the corn kernels from the cobs, and place in a saucepan with milk. Cover and simmer gently for 15-20 minutes, then place in a blender and liquify. Strain the liquified corn mixture through a fine mesh sieve, and then refrigerate. Whip the cream to stiff peaks, then whip in the condensed milk and 250 mL (1 cup) of the corn mixture. Cover and freeze until scoop-ably hard. This channel is nothing without you our viewers!
