Rennet can also be obtained transgenically, by introducing genes from the stomach of ruminants into microorganisms such as Escherichia coli, a bacteria that lives in our intestines, but outside of them, in the urinary tract or stomach, causes serious infections. This type of rennet was developed in the late 1990s. The fat, protein and galactose resulting from the breakdown of lactose are of very poor quality; we cannot easily digest lactose or casein.
