Ingredients: 1.5 – 2 kg thick-cut lamb neck (ask your butcher) 2 tbsp cooking oil 2 onions, sliced 2 sticks celery, chopped 2 large leeks, chopped 3 cloves garlic, crushed 8 baby carrots, whole 8 baby potatoes, whole 2 cups green beans 2 tbsp tomato paste 2 tomatoes, chopped (or 1 tin chopped tomatoes) 1 bouquet garni 6 cloves 4 bay leaves 1 tsp paprika Salt & black pepper to taste 2 cups lamb stock 2 cups fruity red wine Method: Light your fire until medium coals are formed. Season the lamb neck with coriander, salt, and pepper. Braai the lamb neck on the grid to get a smoky char. Remove and set aside. Heat oil in a cast-iron potjie over medium coals. Add onions, celery, and leeks. Cook until soft and golden. Add red wine and cook off the alcohol. Add lamb stock. Stir in garlic, tomato paste, chopped tomatoes, spices, bay leaves, and bouquet garni. Layer the lamb neck back into the potjie. Add potatoes and carrots first, then green beans. Cover and cook slowly for 2 hours, without stirring. Add dumplings on top and cook for another 30 minutes on low heat. Remove from the heat and rest for 10 minutes. Adjust seasoning and serve. 🍞 POTJIE DUMPLING RECIPE Ingredients: 1 cup all-purpose flour 2 tsp baking powder 1 tsp white sugar ½ tsp salt 1 tbsp butter or margarine ½ cup water Directions: Mix flour, baking powder, sugar, and salt. Cut in butter until crumbly. Stir in water to form a thick batter. Rest for 3–5 minutes. Drop spoonfuls onto the potjie.
