Place your smoked meat in a pot along with 2 boxes of chicken broth, onions, garlic, apple cider vinegar, and seasonings. Boil for 2 hours or until the meat is tender. Meanwhile, prepare the collards. 2. To clean the collards, either search online for instructions or soak the entire leaf in water for 1 hour, changing the water each time. Clean and rinse the collards well, then soak or rinse until the water is clear. 3. Once the meat is tender, add the chopped collards, Cajun seasoning, garlic powder, and onion powder. Cook for a total of 1 hour and 30 minutes before completion, add sugar, hot sauce, and any other preferred seasonings. The entire process should take around 3 to 4 hours: 2 for the smoked meat and 1 to 2 for the collards, and the rest is history.
