Healthy Mediterranean Bean Soup Recipe – Black and White Beans, Sweet Potatoes, and Greens. A warm and hearty Mediterranean bean soup, simple, healthy, and full of flavour. In this recipe I use two kinds of beans, black and white, and combine them with sweet potatoes and leafy greens for a beautiful balance of colour and taste. It is rustic, comforting, and naturally full of goodness. This is one of those dishes that makes you feel nourished and relaxed. You can prepare it the night before, warm it up after a long day, and enjoy a bowl that tastes even better the next day. The curry powder gives a gentle twist that works perfectly with the beans and vegetables. I am using tinned beans so that anyone can make it at home with everyday ingredients, no need to overcomplicate things. Just Mediterranean food at its best: simple, honest, and deeply satisfying. Ingredients 1 tin black beans (keep the water) 1 tin cannellini beans (keep the water) 1 medium red pepper 1 large onion 2–3 small potatoes 1 medium sweet potato 2–3 celery sticks with leaves A large handful of chard (or spinach or any leafy greens) 2–3 cloves garlic, crushed 1 dessert spoon tomato purée 1 tin chopped tomatoes 1 heaped teaspoon medium curry powder Olive oil, salt, and pepper to taste A small chilli (optional) Hot water as needed Instructions Chop all vegetables roughly. Dice the potatoes into small cubes to release their starch. In a large pot, heat olive oil, add onion, celery, and pepper. Season with salt and pepper. Add garlic, tomato purée, and chilli. Mix well. Add the beans with their liquid, plus enough water to cover. Stir in the curry powder, chopped tomatoes, and chard. Bring to the boil, then simmer gently for about 25 minutes. Adjust water for desired thickness. Serve with a drizzle of olive oil and, if you like, a little grated Parmesan or pecorino.
